Tallow fried hash on repeat this winter, inspired by an incredible breakfast I had at the @secret.sanctuary.retreat (thanks for letting me cook in your beautiful kitchen!) 🌞

Here's how I make it:
-big spoonful of tallow chunks (or ghee, duck fat or lard if that's what you have)
-1 small onion, sliced or diced
-3 medium potatoes, grated
-sea salt and black pepper, to taste

In cast iron or carbon steel, heat up the tallow on high. With a wooden spatula or spoon, sauté the onion until soft and translucent, then add in the shredded potatoes, sea salt and black pepper. Stir everything in the tallow until the potatoes are crispy and golden.

Serve with good quality bacon and eggs, homemade tomato beans, lacto-fermented sauerkraut, sausages, or anything, really.
